The extraction of Linden Honey 

Extraction of the honey from the combs at the end of the season involves breaking the wax seal and removing the honey by centrifugation. The honey is then strained and, in some cases, filtered and heated to eliminate yeasts that could cause spoilage. Once bottled, some products can be prone to hardening due to the crystallization of the sugars.  

Consequently

Particular or special phytochemicals of linden honey include methyl syringate, phaseic acid, and lindenin (4-(2-hydroxypropan-2-yl) cyclohexa-1,3-diene-1-carboxylic acid). The most prevalent ingredients of linden honey are methyl syringate and lindenin, with average contents of 10.44 and 21.25 mg/kg.

 

Technical parameters

The flavor of linden honey is spicy, sweet and mildly sour. Color varies from yellow to amber.
